Mini Eggplant Pizzas

You will need:

  • 1 eggplant, three inches in diameter, peeled and cut into 4 half-inch thick slices
  • 4 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup pasta sauce
  • 1/2 cup shredded part-skim mozzerella cheese
  • Sliced turkey pepperoni (optional)
  • One diced tomato (optional)

To Make:

  1. Preheat the oven or toaster oven to 425 degrees F.
  2. Brush both sides of the sliced eggplant with olive oil.
  3. Season with the salt and pepper.
  4. Arrange on a baking sheet and bake until browned and almost tender (6 to 8 minutes), turning once.
  5. Spread one tablespoon of pasta sauce on each eggplant slice.
  6. Optional: add turkey pepperoni or tomatoes (or both!).
  7. Add shredded cheese.
  8. 8. Bake until cheese melts, about 3 to 5 minutes.
